At Xolo Tacos the menu features small plates of tacos and quesadillas, soups, salads and a variety of main courses and desserts, enjoyable with friends and family. 

The restaurant, which plans to open before the end of the summer, replaces the Japanese Fuji Mountain restaurant, located on 14 North Merion Street next to the Bryn Mawr fire station. Transforming the sushi counter into a tequila bar, and working with local producers, Xolo Tacos will offer a menu of fresh tacos and other Mexican specialties, respecting the real customs of the traditional taste and cuisine. 

Carlos Fink grew up in Mexico City, before moving back to his birthplace of Philadelphia in 1986 for a degree at Temple University. For over 15 years, Fink has worked various facets of the restaurant business, from dishwasher to general manager, in restaurants such as the White Dog Café, the London Grill, Ristorante Panorama, the Hershey Hotel and more. He shares this project with his wife, Hayley Fink, who has always enjoyed the simplicity and freshness of authentic Mexican cuisine and dreams of sharing it with food lovers on the Main Line through this new restaurant. Both are long time residents of Lower Merion and their children attend local schools.

Philadelphia-born Carlos Fink is opening his first restaurant, Xolo Tacos, in the heart of Bryn Mawr.
